bug: Process resources action not running, causing plugin versions to not be included correctly in jar

After trying to fix an annoying warning message with the processResources task that we use to format plugin versions in the plugin.yml file, it seems the task just doesn't run correctly. Revert this or try to find an alternate way of generating the version automatically
