`[patch.crates-io]` does not patch git dependencies in Cargo.toml

When trying to use a local version of rust-lightning for development, the [patch.crates-io] section in Cargo.toml does not work because the lightning dependencies are specified as git dependencies, not crates.io dependencies.

Indeed, you'll want to do what we did in rust-lightning's CI: lightningdevkit/rust-lightning#4283

I had planned to eventually add that commented-out section when touching Cargo.toml again. Do you think adding this is worth a dedicated PR?
