Make Wayland the Default for Wine on Wayland (Help checking stability)

Description
Now that Wine with true wayland support seems stable, and on Nvidia drivers more stable than XWayland, suggest that we move the default to use native Wine Wayland.

Proposal is to have Default wayland on wayland windows managers enabled unless DISABLE_WINE_WAYLAND flag is set, remove the WINE_EXPERIMENTAL_WAYLAND flag.

I have been using this under Wayland with Nvidia/ AMD and Proxmox VGPU my rides are usually between 40 min and 2 hours and its stable and seems more performant (no idea if that is the placebo effect)

Some quick final tests so might wait a bit longer

• Nouveau Driver (XWayland is stable, Wayland Freezes)
• NVidia 555 Drivers (XWayland Crashes (NVRam issue), Wayland seems stable but may still have NVRam issue)
• AMD Drivers stable
• Proxmox vGPU stable (AMD iiGPU is the back end gpu for this)

So think I will wait for a bit see if the Nouveau gets sorted or if I can find why its freezing, suspect NVRam but no idea)

Nouveau is unstable under Wayland for Zwift and I think for X11, there is a lot of information but it comes down to this:

nouveau: kernel rejected pushbuf: No such device

Lots of info on things like Sway and Blender etc but no resolution something to do with the Mesa or Nouveau drivers.

Because if issue #285 I tried to launch zwift with WINE_EXPERIMENTAL_WAYLAND=1 and I get an opengl error. So I think it's safe to say that we're not there yet to make it the default (maybe if we can update to wine 11?).

Update: That opengl error is fixed by installing libegl1 in the container.
