Migrate away from Plotly and recreate graphs

The Plotly.js library is likely the reason why the app does not run in Safari (#18). Best alternative appears to be [Recharts](https://recharts.github.io/), but may need to fall back on [D3](https://d3js.org/) if certain features cannot be implemented
