docs: stop listing @astryxdesign/vega as a published package#3089

@astryxdesign/vega is marked private and is not published to npm, but the README and packages/README listed it among the published packages. A user following the docs to install it would hit a 404. Group vega with @astryxdesign/lab as internal/unpublished (used for Storybook and the sandbox) and remove it from the published-packages structure line.
