docs: document --skip-provider CLI option

Summary

Updates the Quick Start documentation to document the new --skip-provider CLI option added in #2063.

Changes

• Added a tip callout in packages/create-agents/README.md explaining the --skip-provider flag
• Documents that users can explore the framework without needing an API key upfront
• Notes that this option uses a mock provider with deterministic responses
