Adds dedicated AI docs pages for OpenAI Codex and Cursor, and refocuses the Plugins page around Railway plugin packages and marketplace-based installation.

Hold this PR until the official Railway Codex and Cursor plugins are available in their respective plugin marketplaces/libraries. The new Codex and Cursor pages describe plugin-based installation, so merging before those plugins are discoverable could send readers to an unavailable setup path.
