Immich Dependency Updates and Docker Compose Cleanup

Description

Minor housekeeping changes to the Docker Compose configuration:

  • Redis: Upgraded Valkey from 8-bookworm to 9, with updated image digest
  • Postgres: Pinned the existing image to a specific SHA256 digest for reproducible builds
